These brownies were presented at the Valentine's Day celebration in the office I work in and I tasted one, then two.....delicious!! Thank you Erin for sharing this recipe with me.
Erin’s Wheat Free Vegan Brownies
· 1 1/4 cups sweet rice flour (I just use brown rice flour)
· 1 cup brown sugar
· 1 cup white sugar
· 1 cup water
· 1/2 cup vegan butter, melted (you can also use oil or regular butter)
· 1 cup semi-sweet chocolate chips
· 3/4 cup cocoa powder
· 1 teaspoon salt
· 1 teaspoon vanilla
· 1/2 teaspoon baking powder
Preheat oven to 350.
Heat 1 cup water and 1/4 cup rice flour in a saucepan until it forms a paste (I put it on medium/low and stir frequently). Set aside to cool.
Mix remaining cup of rice flour, baking powder, cocoa powder and salt.
Stir in vanilla and melted vegan butter.
Stir in sugar and flour/water paste, then chocolate chips.
Pour into greased pan and bake approx 45min.
